apple spice cake

Grain free, nut free, dairy free, refined sugar free.  Most surprisingly, it isn’t disgusting.  It’s full of delightful fall flavor, and so easy you can whip them up after you put the baby to bed and still have time to numb your brain with a couple episodes of Gilmore Girls (thank you Netflix for finally jumping on the Gilmore Girls train!)


1/2 cup coconut flour

1/2 cup arrowroot flour

1/2 tsp. baking soda

1/4 tsp. salt

1-2 tsp. cinnamon

1/4 tsp. nutmeg

pinch of cloves

1/4 cup maple syrup (real)

1/2 cup apple sauce

3 eggs

2 Tbl. Coconut oil, melted

juice from 1/2 of a lemon

1 apple diced

1-2 tsp. vanilla extract

Sift dry ingredients, then mix in the wet ingredients.  Pour and flatten into a greased 8 X 8 baking dish.  Sprinkle top with additional cinnamon.  Bake at 325 (for glass dish) for 35-40 minutes.  Let cool, then enjoy with a mug of pumpkin spice tea.

note: if using a nonstick baking dish, increase temperature to 350 and start by only baking for 25 minutes and then checking every 5 minutes until the center is set.

  1. Apples are the perfect little desserts for the fall. I love that you created this cake using coconut flour and arrowroot flour. Does it change the texture of the cake? I have never heard of arrowroot flour before. I love that your cake contains so many healthy ingredients. I can picture myself eating that extra slice and not feel guilty! Thanks for sharing this recipe =)
