Here you go, Mom. These are delightful. Ollie likes them. Lady likes it when Ollie shares them with her. They’re grain free, gluten free, dairy free, refined sugar free, and nut free.
It’s important to note that Justin is pretty apathetic towards anything pumpkin spice that isn’t slathered in cream cheese frosting. He doesn’t have bad taste, generally, but come on. Pumpkin spice season is basically the best time of the year. That is until mint + chocolate season starts. I think that pumpkin spice pancakes can stand without any frosting, though if you feel like adding some I won’t stop you!
1/4 cup coconut flour
3/4 cup tapioca or arrowroot flour
1/2 tsp baking soda
1/2 tsp cinnamon
1/8 tsp nutmeg
1 pinch allspice
1 pinch cloves
1/2 tsp Molasses
1 Tbl melted butter or coconut oil
1 Tbl Maple Syrup or sweetener of choice
1/4 cup pumpkin puree (more if you like)
coconut or other milk added until pancakes are runny enough. (Runny?) I’d guess about a 1/2 cup
Mix up and cook as per usual in your favorite pancakey way.
Grain free, nut free, dairy free, refined sugar free. Most surprisingly, it isn’t disgusting. It’s full of delightful fall flavor, and so easy you can whip them up after you put the baby to bed and still have time to numb your brain with a couple episodes of Gilmore Girls (thank you Netflix for finally jumping on the Gilmore Girls train!)
1/2 cup coconut flour
1/2 cup arrowroot flour
1/2 tsp. baking soda
1/4 tsp. salt
1-2 tsp. cinnamon
1/4 tsp. nutmeg
pinch of cloves
1/4 cup maple syrup (real)
1/2 cup apple sauce
2 Tbl. Coconut oil, melted
juice from 1/2 of a lemon
1 apple diced
1-2 tsp. vanilla extract
Sift dry ingredients, then mix in the wet ingredients. Pour and flatten into a greased 8 X 8 baking dish. Sprinkle top with additional cinnamon. Bake at 325 (for glass dish) for 35-40 minutes. Let cool, then enjoy with a mug of pumpkin spice tea.
note: if using a nonstick baking dish, increase temperature to 350 and start by only baking for 25 minutes and then checking every 5 minutes until the center is set.
